Ingredients
1 bag of flour
1 can of coconut milk
1 lbs of fresh shrimp
1 lbs of bean sprout
10 tsp. Of coconut oil
3 scallions
1 head of lettuce leaf
Mint and perilla leaves
1 pan with a lid
1 spatula
Store-bought fish sauce, water, sugar, lemon juice, garlic, and hot pepper
Recipe
Preparations for the ingredients to cook.
Rinse 1 head of lettuce, 1 pound of bean sprouts, mint, and perilla leaves.
Cooking the Banh Xeo
Pour 1 bag of flour for pancake into a big bowl
Add 1 can of coconut milk and 3 cups of warm water
Chop 3 scallions and add into the bowl, then set it aside.
Wait for 15 minutes.
Clean the shrimp and add some salt and pepper, mix them together and set it aside.
Put a pan on a stove and wait until the pan gets hot
Put 1 tsp of coconut oil on the pan
Stir fry 3 shrimps for 30 seconds
Pour ? cup of the already mixed pancake batter into the pan
Add a handful of bean sprouts and cover the pan for 3 minutes. Then remove the lid and let it cook for 2 minutes.
Use a spatula to fold the pancake in half, keeping the shrimp and bean sprouts inside
The pancake is now ready to serve along with fish sauce and fresh lettuce and herbs
Fish Sauce to Serve with Banh Xeo
½ cup of sugar
½ cup of cold water
? cup of fish sauce
Stir all the ingredients above together
Add ¼ cup of lemon juice
Add 2 tsp of minced garlic
You can also add hot pepper, depending on how spicy you want it to be
