Join us to learn how to cook healthy Vietnamese Opo Squash soup and enjoy it with rice or bread.
Recipe
Ingredient list:
1 opo squash, cut into triangular pieces
2 tbsp olive oil or coconut oil
3 shallots, sliced
1 tsp ground pepper
12 prawns, peeled and deveined
1 tsp salt
4 cups of water
Handful chopped cilantro leaves
Fish sauce to taste
Marinate the shrimp with salt and pepper, put it aside for 10 minutes
Peel, wash and cut opo squash into triangular pieces
Put 2 tbsp olive oil or coconut oil into the pot on medium heat
Add scallions and shrimp and stir fry
Put chopped opo squash into the pot and stir fry for about 5 minutes.
Add 4 cups of water and wait until it boils
Add fish sauce to taste
Add ground pepper and cilantro leaves.
Now it’s ready to serve with rice or bread
